Calphalon Tri-Ply Collector’s Edition 3-Quart Chef’s Pan with Lid
With aluminum cores enclosed by stainless-steel layers, Calphalon’s Tri-Ply pots and pans deliver the attributes of both metals. The aluminum cores conduct heat quickly and uniformly across the pots and pans’ bottoms and all the way up their sides. The durable, 18/10 stainless-steel interiors and exteriors are easy to clean, resist scratching, denting, warping, and corrosion, and are nonreactive to acidic food. This 3-quart, round-sided chef’s pan has a domed, glass lid so cooking can be monitored without releasing heat. The lid is oven-safe to 450 degrees F, ensuring the pan not only can be used atop the stove for sauces, deep-frying, and stir-frying but can go into the oven for braising and stewing. The handle stays cool on the stovetop. The pan’s rim is flared to facilitate dripless pouring. Tri-Ply cookware is polished to mirror-finish outside for beauty and wears a satin-finish inside to conceal inevitable utensil marks. Customer Review: A great pan a great price!
So far, I’ve only used the pan to make a batch of clam chowder. I evaluated a few big brand (you know the one) pans in a local store prior o purchasing and found the handles to be very uncomfortable. Even though a pot holder or kitchen towel will be used when the pan is hot (thus padding the grip), I considered the comfort while handling the pan to be important. The Calphalon pan was far more comfortable. This Calphalon Tri-Ply 3-Quart Chefs Pan is well balanced and performed above expectations. The pan heated well. The bacon pieces cooked up evenly across all surface area; onions softened just as well. The size was perfect for the chowder and left plenty of room to stir. Clean up was super easy. I haven’t picked up any Bar Keepers Friend yet, but will soon to keep it as clean and shiny as possible. I’d say go ahead and pick one of these up. If you like cooking with stainless steel, I don’t think you’ll be disappointed.

I purchased this pan because of the great reviews I read on this site. The pan has certainly lived up to its reputation. I cook almost everything in it. It’s a perfect size for a meal for 2 or for a big pot of veggies for a group. I even made a batch of fudge in it. Every time it has cleaned easily with a brush and dish soap.

I finally used these pans last night to bake a chocolate cake. But as I placed these 2 pans into my oven, I realized my oven wasn’t big enough to let them sit side by side and I didn’t have a second level in it. So after placing them in a funny angle just to make them fit, I told myself they are going to be so unevenly baked! But to my amazement, they didn’t! They were probably the most evenly baked cakes that have ever come out of my oven! I am going to get them now in all shapes and sizes!

Customer Review: works great but don’t leave in standing water
This product works great. I love it b/c it gives tarts and quiches a nice fluted edge, cooks evenly, and has NO Teflon coating (a health concern since studies have shown it leaches and scrapes off into food and may be linked to memory loss). However, since it’s NOT made of stainless steel or aluminum you do NOT want to leave it in standing water. I left mine to soak for a few hours, forgot about it, and found the beginnings of rust around the edges (which cleaned up quite easily with dish soap and elbow grease). This pan does cook great, I will get much use out of it! The bottom pops up easily reveling the crispy crusty buttery edge and rests easily on a plate for a beautiful presentation, and EASY serving. Bake ware without Teflon is becoming hard to find, so I was thrilled when I found this specialty shape! Plus, the price is right!
