Customer Review: Another versatile product from Le Creuset
Le Creuset; a mainstay of French chefs; manufactures porcelain vitreous enameled cast iron cooking vessels as well as stoneware, silicone, and other quality products. This square pan is cast from molten iron formed in sand moulds which are used only once. For this reason, one pan may look like another, but each is unique in its own way. As a highly efficient material, cast iron absorbs and distributes heat evenly. For this reason, it is recommended to use on low to medium heat. There are a few exceptions like boiling water where cooking on high heat is appropriate and okay. Otherwise, cooking with high temperatures may cause food to stick, discolor the enamel coating, or cook the food unevenly. Remove cast iron from the heat and it does not cool off quickly. This helps your food stay warm while serving. Beware; iron tends to be heavy so these cooking vessels tend to be heavier than the typical baking pan. Cast iron is an effective material for cooking so why cover it with enamel? Iron tends to rust; iron oxide (rust) doesn’t add any complimentary flavors to your food. If your cast iron cooking vessel was not enameled, you would have to season and maintain it. Adding the porcelain enamel not only looks good, but has multiple benefits. The enamel, being a solid coating, is one of the most hygienic surfaces to cook on, does not stain, absorb odors, retain flavors, and is easy to clean. The enamel can be damaged, so limit cooking tools to plastic or wood. Currently this pan is offered in four different colors; Flame, Cherry, Dune, and Cobalt. The benefits of cooking with Le Creuset cast iron are many, but lets get down to the roasting pan specifically. This pan holds 3 quarts of food, measures 9 3/4 x 9 3/4 x 2 inches internally, and weighs 7 pounds. 3 quarts will typically feed 4-6 people when it comes to casseroles, so consider your recipes when determining the size you need. If you need a larger pan, the rectangular roasters may be the better option. Except for roasts, the roasting pan tends to do best if at least 3/4 full. Any less and you may overwhelm your food with heat evenly dispersed in the pot. I find that the cast iron adds a crispy texture to food that may be desirable with a dish like mac-n-cheese, while not so desirable for other dishes. Some other possibilities for this pan include casseroles, deep dish pizza, pork chops covered with cornbread dressing, dinner rolls, baked squash, lasagna, scalloped potatoes, cobblers, pineapple upside down cake, or bread pudding. The possibilities almost seem endless to your imagination. One feature that people tend to complain about is the cost. The cost does seem steep compared to other pans made from other materials. Heck, cast iron doesn’t seem like it should be expensive when comparing to that old cast iron pan past generations have used for cornbread and camping. However the manufacturing process requires making a mould for each and every pan produced. They then go through the enameling process before shipping these heavy pans. If you take what goes into making and distributing these high quality cast iron products, the cost tends to make sense. Then consider that this pan will easily last a lifetime when taken care of. Customer Review: HIGH QUALITY PAN
This is another good quality product from Cuisinart. It’s heavy and well made with rolled edges. The bottom plate fits snuggly and the pan closes up nice and tight. This is the third pan I’ve purchased made my Cuisinart and they are all great quality and will last a long time, I’m sure. I had an old springform pan than has now been discarded. The old one was a piece of junk compare to this new one. I am happy with my purchase and recommend it highly.

All-Clad pans with a stainless interior cooking surface are oven-safe up to 500 degrees. Cleaning Instructions
For daily cleaning, warm soapy water is sufficient. Clean your All-Clad thoroughly after each use. Food films left of the pan may cause discoloration and sticking. To get rid of stuck-on food or discoloration and stains from using too high of a heat, we recommend cleaning your All-Clad with a product called Bar Keeper’s Friend. To use the Bar Keeper’s Friend, simply use a soft cloth or sponge and water and make into a soupy paste. This can be used on the interior, as well as the exterior of your All-Clad (excluding the Cop-R-Chef). The Bar Keeper’s Friend can also be used on the exterior of the All-Clad Stainless collection, LTD collection, and MC2 collection. For cleaning of the Cop-R-Chef exterior, simply use a brass/copper cleaner. If your water has a high iron content, you may notice a rusty discoloration. Use Bar Keeper’s Friend to remove it.

Customer Review: Sauce Making
I’ve used AllClad pots and pans for more than thirty years. The originals I bought all those years ago are, if anything, handsomer than they were when new, because of all the polishing they’ve had. They function just as they always have, too. I’ve had to replace some of them because a couple of years ago, I began cooking by induction, and my nice old faithfuls have aluminum exteriors and won’t conduct. This little saucier is the junior of a larger one I own, and is perfectly suited to making classic sauces, as well as the morning oatmeal, if you start your day that way. I’m sure there’s nothing I can say about AllClad you don’t already know. We all know there are cheaper pots, but there are cheaper everything elses, too, which is no reason not to go first class if you can.
Customer Review: Great product - lousy “free” shipping service
I love all-clad products. This is a great pan. But Amazon’s free shipping policy needs review. This item sat in a UPS warehouse 100 miles from my home for about 2 weeks and then it arrived after 3 weeks of the order. I could have walked the 100 miles and back and had the pan before it was shipped. Very poor service, hopefully this will be reviewed and changed.
Lodge Logic Pre-Seasoned Square Grill Pan
The one thing that probably discourages more people from purchasing and using cast iron is maintenance. Like carbon steel woks, cast iron cooking pieces require “seasoning.” To many this is a mysterious or overly time-consuming process. Even if you treasure fond memories of eggs and pancakes cooked in grandmother’s ancient, blackened skillet, you might have no idea how to turn your new pan into such a treasure. Fortunately Lodge has come out with the new Logic line, which has been evenly coated on all surfaces with an electrostatic spray of vegetable oil. Next the cookware is put into an extremely high temperature industrial oven which bakes the coating into the surface. Not only will you be spared the time and effort of seasoning, but also the new piece you buy will look and perform better than if you had seasoned it at home. Just like that heirloom pan you will find that even pineapple upside down cake doesn’t stick to this surface. The ribbed bottom of this pan allows grease to puddle away from what you’re cooking, all the while making those desirable stripes across fish, beast, or fowl.

I really like this pan, tastes just as good as cooking on a grill. I orginally bought this for a friend for Christmas, then I decided it may be something I’d enjoy also so I purchased another for myself. I got it Monday and I’ve cooked on it twice already. The first time for hot dogs and burgers and the 2nd time steak. Both were absolutely delicious! The pan is great except the smoke is mad crazy. I didn’t start the vent fan before cooking on it the first time because I didn’t realize it was going to smoke up my house so bad. This time I was prepared and started the vent fan before even heating up the pan. It worked for the most part but the longer it is on the smokier the house got. Clean up is no picnic either. I came back on here to find the cleaning brush and decided to also purchase the mit also for both my friend and myself. I don’t know how they work out yet because I’m not set to receive them until sometime between Jan 11 and 28 of 2008!!! That’s dissapointing but I will update when I get a chance to use them.
